Hass avocado sizes refer to the classification of the fruit based on the weight of an individual fruit. These sizes are determined by the number of fruit from each size category needed to fill a 25 lb. carton.

 

This classification is necessary for marketing and distribution, as it allows for standardizing quality and facilitating its handling in the supply chain.

 

Correct sizing ensures that consumers receive uniform, high-quality products, while optimizing export and distribution logistics.

 

5 STAGES OF RIPNESS

The first step to serving avocados at their peak of freshness and flavor

is to understand the stages of ripeness for Hass avocados.

 

 

 

 

 

 

 

Fresh off the tree, the avocado is very hard with no give.

Perfect for juggling but not quite for eating! It’s still about 5+ days away from being ready, so keep it at room temp and let the countdown begin.

Ripening has begun, but the avocado is still very firm.

Give it about 4-5 days at room temperature, and it’ll be ready to enjoy.

 

PRE CONDITIONED

 

 

 

 

 

 

As it ripens, the avocado is firm but yields slightly to pressure.

Give it around 2 more days at room temp, and it’ll be perfectly ripe.

HANDLING AND STORAGE

Recommended storage temperatures for avocados can vary due to seasonality and country of origin. In general, cooler temperatures between 38°F and 42°F are acceptable for all countries of origin throughout the year.

 

Low maturity fruit will maintain its quality and shelf life at slightly warmer temperatures such as 42°F. As the maturity and dry matter of the fruit increases, the storage cooler temperature should be reduced in order to increase shelf life. Higher maturity fruit will begin the ripening process more quickly due to higher oil content.

 

Once ripe, cooler temperatures around 38°F will extend the shelf life of the ripe fruit and help to slow down the fruit from continuing the ripening process. Note that ripe fruit is less susceptible to cold damage, so storing at these temperatures will also help to maintain quality.
